I am an Irish born chef living in the West of Ireland, an advocator of preserving and using our own natural resources. I support our old ways of hunting and gathering to bring food to the table. I am extremely passionate about food and enjoy learning the cuisine of other cultures and am always full of questions to anyone I meet that feels the same way. My way of cooking is an intuitive flair, so I very rarely follow a recipe. I do look at recipes and retain the knowledge to re-adapt it to my own kitchen creation.
